Brazo de Mercedes (BRAH-soh deh mehr-SEH-des) – A classic Filipino dessert roll made of soft meringue wrapped around a rich, creamy custard filling.

The Filipino dessert Brazo de Mercedes has a Spanish name because of the Philippines’ long history under Spain during the colonial period.

“Brazo de Mercedes” literally means “arm of Mercedes” in Spanish. The name is thought to come from its shape—it looks like a rolled “arm” made of soft meringue wrapped around a rich custard filling.

As for “Mercedes,” there are a couple of common explanations:

  • It may refer to Our Lady of Mercy (Nuestra Señora de las Mercedes), a Catholic figure introduced during Spanish rule.

  • Another idea is that it was simply a poetic or elegant Spanish name given to make the dessert sound refined.
