Kare-Kare

A rich Filipino stew featuring tender oxtail (or other meat) and vegetables bathed in a creamy peanut sauce, with a distinctive orange hue from annatto. Commonly served with bagoong (shrimp paste), itโ€™s a luxurious dish often reserved for special occasions.  

Kare-Kare (kah-reh kah-reh) โ€“ From the word kari (curry), meaning โ€œsauceโ€ or โ€œstew.โ€  

Recipe for 4-6 People

  • 2 lbs pork pata 
  • 1 onion, garlic 
  • 8 cups water 
  • 4 bay leaves 
  • 4 tbsp rice flour 
  • 2 tbsp annatto powder 
  • 4 cups broth 
  • Long beans, eggplant, bok choy 
  • 1 cup peanut butter 
  • 3 tbsp sugar 
  • 3 tbsp fish sauce  

Prep Time: 20 minutes

Cook Time: 2.5-3 hours

  1. Sear pork, boil with aromatics until tender.   

  2. Reserve broth.   

  3. Toast rice flour, add annatto, stir in broth to thicken.   

  4. Add vegetables, peanut butter, sugar, fish sauce.   

  5. Return pork, coat well, simmer.   

  6. Serve hot with bagoong and rice.
