Menudo

A classic Filipino pork stew made with pork, liver, potatoes, and carrots simmered in a flavorful tomato sauce. It’s a beloved everyday dish often served with rice.  

Menudo (meh-NOO-doh) – A Spanish word meaning “small” pieces, referring to the chopped ingredients.  

Recipe for 4 People

  • 1 kg pork shoulder 
  • Pork liver 
  • Carrots, potatoes, red bell pepper 
  • Hot dogs (optional) 
  • Tomato sauce, oyster sauce 
  • Garlic, onions, tomatoes 
  • Bay leaves  

Prep Time: 15 minutes

Cook Time: 1 hour

  1. Fry vegetables and hotdogs until browned, set aside.   

  2. Cook liver briefly, set aside.   

  3. Sauté onion, garlic, tomatoes, then add pork.   

  4. Add sauces, simmer until pork is tender.   

  5. Return vegetables and liver, add bay leaves, simmer briefly.   

  6. Serve with rice.
