Paksiw na Pata

A savory-sour Filipino dish made with pork hock simmered in vinegar, soy sauce, garlic, and bay leaves until tender, with a hint of sweetness. It’s a comforting classic served with rice.  

Paksiw na Pata (pahk-SEE-oo nah PAH-tah) – “Paksiw” means to cook in vinegar, “pata” means pork hock.  

Recipe for 4-6 People

  • 2 kg pork hock 
  • Soy sauce, vinegar 
  • Brown sugar 
  • Bay leaves, peppercorn 
  • Garlic, onion  

Prep Time: 10 minutes

Cook Time: 1.5-2 hours

  1. Sauté garlic and onion, add pork hock.   

  2. Season, add soy sauce, let reduce.  

  3. Add water, bay leaves, peppercorn, simmer until tender.  

  4. Add sugar, vinegar, cook uncovered until sauce thickens.
